El quall fa que la llet es qualli, formant una esp\u00e8cie de gelatina.<\/p>\n\n\n\n<p><strong>Tall de la quallada: <\/strong>La quallada es talla en petites galledes i despr\u00e9s es deixa reposar per a permetre l&#8217;alliberament del s\u00e8rum.<\/p>\n\n\n\n<p><strong>Modelat<\/strong>ge: La quallada es col\u00b7loca en motlles per a formar la forma cl\u00e0ssica del formatge Camembert. En aquest punt, els formatges s\u00f3n voltejats diverses vegades per a permetre un drenatge uniforme.<\/p>\n\n\n\n<p><strong>Salat<\/strong>: Es retiren els formatges dels motlles i se salen. Aix\u00f2 ajuda a desenvolupar el sabor i a prevenir el creixement de bacteris nocius.<\/p>\n\n\n\n<p><strong>Maduraci\u00f3<\/strong>: Despr\u00e9s arriba l&#8217;etapa de maduraci\u00f3, en la qual es deixen madurar els formatges durant almenys tres setmanes. Durant aquest temps, el Penicillium candidum creix en l&#8217;escor\u00e7a, donant-li el seu caracter\u00edstic aspecte vellutat blanc i ajudant a desenvolupar el seu sabor distintiu.<\/p>\n\n\n\n<p><strong>Empaquetatge<\/strong>: Una vegada finalitzada aquesta etapa, els formatges s&#8217;emboliquen en paper i es col\u00b7loquen en capsetes de fusta, on romanen fins a aconseguir almenys 21 dies de maduraci\u00f3.
